Made in the Swiss region of Vaud, Gruyere is a smooth but firm cheese that when young is sweet and fruity in flavour with a little nutty finish.  This cave aged variant is from the same pastures yet finishes its maturing period of twelve months in alpine caves to deepen the flavour and find it its strength. Wonderfully full in flavour with complex tones that develop on the palate, this is one of Switzerland's finest exports.
